Spicy Easy Healthy Thai Basil Chicken Stir Fry

1 pound roughly chopped boneless chicken thighs / breasts
5-6 chopped green onions – whites and greens separated
5-6 cloves minced garlic – approx 1 full tbsp.
2-4 chopped red chilies – fresh or pickled
1 cup of whole or chopped Thai basil
oil – peanut oil or any high temp oil

1 tbsp. oyster sauce
1 tbsp. dark soy sauce
1 tbsp. light soy sauce
1-2 tbsp. water
2 tsp. sugar

In a medium high wok / pan add 1-2 tbsp. oil, minced garlic, red chilies and onions. Stir and cook for 1 minute.

Turn heat up to high. Add chopped chicken. Stir and cook for 3-4 minutes.
Add bean sprouts and stir to combine.
Add sauce, stir and cook for one to two minutes.
Turn off heat. Add chopped green onions and basil. Stir to combine.

Served with steamed jasmine rice and garnished with some fried garlic and more chopped green onions.



I have an electric stove so I use a Carbon Steel Flat Bottom Wok
