Red Thai Curry with Fish and Vegetables

Veggies: Carrots, celery, potatos, onion
Meats: Option, but we used fish
1 can of red curry paste
1 can of coconut milk
Scallions, garlic

Wash, cut, and drain the vegetables
Mince garlic and put a side
Chop scallions

1. Cook garlic for a minute, then add a can of red curry paste. Mix well.
2. Once it gets really fragrant, add in the vegetables. Toss. Add half cup of water and cover to let vegetables cook and soften.
3. When veggies are almost done, turn down the heat and add coconut milk.
4. Add Fish or other meat or no meat and let cook.If you use other meat, make sure they are precooked to about 80% prior to adding at this point.
5. Add scallions, toss, and serve with rice.
